Based on the 2021-2022 data, the undergraduate student population at EICC is largely skewed towards women students, with 57.9% of undergraduate students being women and 42.1% being men. The total number of full-time, first-year undergraduate students is 7,460, with 4,320 women and 3,140 men.

The largest ethnic group among the students is White, comprising 67.4% of the undergraduates population , with a total of 5,018 students.

Following behind are Hispanic students, constituting 11.0% of the student body, with 821 students. African American students represent 7.2% of the population, with 533 students, while Mixed race students account for 4.2%, with 310 students. Asian students account for 2.4% of the undergraduate student body, comprising 181 students. Finally, Hawaiian students have the smallest representation at 0.1% , with 11 students.

International students make up 0.1% of the undergraduate population, totaling 6 students.
